how would martial arts evolve in a magical world?
If you want to see how a roleplaying game mechanically integrated Runes (hebrew, norse and celt) into a world where combat is a distinct possibility, I suggest you check out Victoriana for inspiration.

What professions would a medieval village with a population of 100 need?
@MD-Tech No. But it's on my list of places to go. Though I'll argue that japanese street food has a fair share of batter. mouth watering Darn, when's lunch?

I think you mean "a healthy diet via bartering ". +1 For the travelling specialized craftsmen.

Could six-limbed creatures evolve from griffin or dragon to centaur?
+1 for the vagaries of evolution. Though, I would add some hexapod herbivores into the world to add depth to the idea (pegasus?).

How can I prevent hyper evolved versions of regular creatures from wiping out their cousins?
@JollyJoker Not necessarily. Neanderthals interbred with homo sapiens and lived in the same geographical areas (as well as 2 cool ancestors to the giraffe). The main separator, I think, would be a non-competiton for resources. If unicorns feed mainly on ferns, bushes and leaves, then the grasses can be left to the horses.

Not an answer, but here is a youtube channel that regularly looks at the evolution of certain species: youtube.com/channel/UCzR-rom72PHN9Zg7RML9EbA
