There's a protein that can't be synthesized by the vampires, present in human blood in sufficient quantities, but the versions in other primates differ enough as to be incompatible. This protein is absorbed by a new (small) organ in the upper stomach and esophagus, and thus isn't digested by the stomach in a way that would destroy it.
